Cory Spedding

Hello I'm Cory. I am 13 years old, I`m doing food tech at school at the moment and I`m going to share some recipes with you, such as Garlic bread and chunky chips, the best recipe for chips that you`ll ever find. My hobbies are singing and drama. I  have also just represented the u.k in the 2004 junior eurovision song contest in Lillehammer Norway on 20th nov.I was lucky enough to get 2nd place....it was magical.

 And Finally - for the pudding freaks

Apple & Calvados bavarois with a vanilla scented fruit salad.

This is a pudding freaks dream dessert, and it`s especially nice and light after a heavy meal. A delicate  mousse of apple , and a selection of chopped fruits in a vanilla scented stock syrup, topped off with a toffied piece of apple in caramel.

Ingredients (serves 8 )

400 ml ......Cider

4...............Granny smith apples

6  fl oz.......water

20 g .........caster sugar

4...............gelatine leaves ( softened in a little cold water)

300 ml......whipping cream

2 fl oz.......Calvados ( apple brandy )

Method

1. Boil and reduce the cider down to 6 tbsp remain, then allow to cool.

2. Peel , core then chop the apples, put them into a pan with the water, sugar, a little   lemon juice and simmer for approximately 10 minutes, then liquidize and pass through a sieve. Add the gelatine and cider allow to cool then add the calvados.

3. Whip the cream to the soft peak stage and carefully fold into the apple compote.

4. Place into the fridge to set for a couple of hours .

To Serve

Unmould a portion of mousse onto the centre of a dessert plate, then surround with the vanilla fruit salad, top with an apple ball previously dipped into toffee and garnish with a sprig of mint. Eat and enjoy.
